– Tofu with vegetables and rice (with a sauce of minced ginger and garlic, with tamari soy sauce). Filling, and I always have these ingredients on hand (broccoli, edamame, capsicum, onion etc)
– Mexi-style beans with baked potatoes and salad. We make batches of Mexi-beans and keep them in the deep freezer.
– A vegetable pie with zucchini, carrots and onions. If the zucchini are in season they will be cheaper. Carrots and onions are always cheap, and frozen pastry sheets ought to be inexpensive also. Serve with tomato relish and salad.
DH is vegetarian, so we all eat vegetarian at home. This makes our food quite frugal. It wouldn’t be hard to omit the tofu and add chicken to the rice dish, or add chicken to the vegetable pie, or ground beef to the chili beans for those whose families would prefer to have meat.
